5 Tips for Baking Homemade Bread

From the 19th-27th February, Real Bread Week begins! Created by the Real Bread Campaign, this annual, international event celebrates real bread and the people behind it. The organisation defines real bread as bread “without so-called processing aids or any other additives” and is encouraging people to buy real bread from local bakeries or bake their own. If you want to try making your own real bread, have a read through these five tips for baking homemade bread!

Make sure you use the right yeast

If you’re new to baking, it’s good to note that there are three main types of yeast such as fresh, fast-acting dried and active dried. Fast-acting dried yeast is also known as ‘easy blend’ or ‘easy bake’, and is the yeast used in most bread machines. This type of yeast is also the easiest to use for home baking, but make sure you read through the recipe you’re following to ensure you’re using the right one.

Make sure you store your yeast properly

It’s also important to note that you should check the expiry date of the yeast you’re using. If you have fresh yeast, make sure you store it in the fridge. Fresh yeast will only last for 1-2 weeks. However, you can freeze it for up to three months.

Try out different types of flour

The flour that you use can have an effect on the result of your bread, so it’s worth experimenting with other types. However, the type you use should be based on the kind of bread you plan to make. For example, if you use flour that is high in gluten, it will rise more.

Make sure you measure carefully

You need to be accurate when it comes to measuring since any difference in the amount of water, yeast or salt can affect your loaf at the end. If it’s too hot, it will kill the yeast. It’s also a good idea to use warm water than hot water; you can test the water by putting a finger in and feeling whether it’s body temperature. If you want your bread to have a slow rise, make sure you use colder water.

Try to avoid over-kneading or under-kneading your dough

Whenever you bake bread from scratch, this is something you should definitely try to avoid. You can check whether you’ve done enough kneading by stretching your dough 2-4 inches wide. If it doesn’t break, then you’ve done a great job!
