The founder of Bistrot Pierre was in town on Tuesday 20 November to raise a glass and welcome the start of construction on their latest UK restaurant.

Robert Beacham founded Bistrot Pierre in 1994 with childhood friend John Whitehead. Since those early days their ‘raison d’être’ for great value provincial French cooking served in relaxing and friendly bistrots has proved hugely successful with numerous restaurant openings across the UK.

The opening of the new restaurant in 2019 on the landmark Wish Tower site will represent their furthest step into the south east to date.

Earlier this year Robert Beacham said he ‘could not ask for a better location than the Wish Tower’ in Eastbourne and that he’d had ambitions to open a restaurant in the UK’s sunniest town for some time.

Robert said:

“The prospect of opening a restaurant on what is undoubtedly one of the most stunning locations on the south coast is incredibly exciting. Eastbourne is thriving, the town centre shopping and lifestyle offer is being transformed and the redevelopment of the Devonshire Quarter is spectacular.

“In David Tutt and his team at Eastbourne Borough Council we have established a superb partnership and one that will help us tailor a fantastic dining experience, including locally sourced fish and shellfish, for local residents and the millions of annual seafront visitors.”

The stunning restaurant designs were created by award winning architects Levitt Bernstein in conjunction with Gillespie Yunnie Architects.  The striking angular architecture is inspired by the town’s inextricable relationship with sea and passing vessels cutting through local waters.

Councillor David Tutt, Leader of Eastbourne Borough Council, said:

“I am quietly confident that when Bistrot Pierre opens next year it will quickly become one of their most popular UK destinations.

“The gallic cooking influences, fresh fish dishes, great value and breathtaking sea views are a recipe for success anywhere in the world.
“Knowing how popular the restaurant will be my only concern is being able to make a reservation!”
